Cherry Oatmeal Cookies

Oatmeal cookies are one of my favorite cookies, and when I saw Jenna’s loaded oatmeal cookies the other day, I was inspired to make a batch of my own. Is there a better way to spend your afternoon? Napping? Yeah it’s a close second.

Oatmeal Cookies (recipe inspired by Eat Live Run)

  • 2 sticks of butter, softened
  • 2/3 C brown sugar
  • 2 eggs
  • 1 T vanilla extract
  • 1 1/2 C rolled oats
  • 1 3/4 C all-purpose flour
  • 1 t baking soda
  • 1/2 t salt
  • 1/2 C semisweet chocolate chips
  • 1/2 C chopped walnuts
  • 1/2 C dried cherries

Beat butter and sugar until light and fluffy. Add eggs, mixing well and scraping the bowl as needed. In separate bowl, combine oats, flour, baking soda and salt. Add to butter mixture in three additions, scraping the bowl after each addition. Stir in chocolate, walnuts, and cherries. Bake at 375 degrees for 10-12 minutes.

I used to Trader Joe’s white whole wheat flour to amp up the whole grain, and if you want plain oatmeal cookies stop here.

What are your favorite mix-ins for cookies? I also like to mix-in coconut, cocoa powder, bananas, and other dried fruits.

i know jenna said she doesn’t want to hear about it if you like raisins in your cookies, but maybe you’d like to hear it? i LOVE mixing in raisins in my cookies! also, the mini peanut butter cups from tj’s are a delicious substitute for chocolate chips! so. good.

I’m not a huge fan of raisins in cookies, but I’m not completely against them. I’m definitely going to have to mix in some mini pb cups next time. You can never go wrong with chocolate pb anything!
