First Saturday of fall and it’s over 80 degrees. Jeez. I want my cool temps back!
This morning I met up with Kelly and Holly for Lululemon’s Salutation Nation at Vilas Park.

I think yoga outside needs to happen more often.

After Salutation Nation, Kelly and I had brunch at Cafe Zuzu which is across the street from the Vilas Zoo. It’s a cute coffee shop!


We both had egg+cheese sandwiches with iced coffee
After brunch I had to stop at Trader Joe’s which happens to be across the street from the Lululemon showroom…
Coincidence!

I had some cake with the ladies at Lululemon and did a little shoppin
This afternoon I made pumpkin butter. One batch should last me all fall, and now my house smells like a pumpkin pie…or pumpkin spice latte! Best part? You make it in the microwave! I changed up the spices a bit from last year because I didn’t have all the spices on hand. It tastes exactly how I remember it. I use a medium size round gladware container so that I can cook and store in the same container.
Microwave Pumpkin Butter
Prep Time: 2 minutes
Cook Time: 8 minutes
Ingredients:
- 1/4 cup brown sugar
- 1/4 cup water
- 1 tablespoon pumpkin pie spice
- 1 teaspoon cinnamon
- 1 15 oz. can pumpkin puree
In your microwave safe bowl, stir together the sugar, water, and spices. Microwave for three minutes. Stir in the pumpkin puree, and microwave for five minutes. Stir and allow to cool. I store mine in the refrigerator.

I love pumpkin butter on toast, a waffle, or stirred into hot oatmeal

Unfortunately, I always seem to have plans during Salutation Nation every year! I must put it on my calendar and go next year because it would be cool to do yoga in the Third Ward of Milwaukee. Glad you got to participate!

Oohhh just made myself some pumpkin butter! Thank you, Jess! I actually had a jumbo can of pumpkin so I made some otther things too: pumpkin pancakes (whole wheat flour, canned pumpkin, fat free yogurt, splenda or brown sugar, almond milk) and pumpkin yogurt (non fat plain yogurt or vanilla, canned pumpkin, cinnamon, pumpkin pie spice). Pumpkin is the best!
