I'll Never Buy Roasted Peppers Again

I love roasted peppers.

I have always bought them in a jar.

Then Trader Joe’s had beautiful red peppers on sale.


For some reason, I assumed roasting peppers would be difficult…

Why did I think that?



I rubbed olive oil on two of the peppers and roasted them at 400 degrees for 30 minutes

Let them cool for thirty minutes

Sliced and peeled the skin off


I will never buy roasted red peppers again!

Roasted Red Pepper Sauce

This would make a great sauce for a sandwich, a salad dressing, but it’s also a great dip for pita! I made it in my food processor, but I’m sure a blender will work fine. If you don’t have Trader Joe’s 21 Seasoning Salute, you can use Italian seasoning blend or your favorite herbs. Whatever you think will taste great with peppers!

Total Time: 10 minutes


  • 2 large red bell peppers, roasted and skins removed
  • 1 medium tomato, chopped
  • 2 cloves of garlic
  • 2 tablespoons olive oil
  • 1/2 teaspoon 21 Seasoning Salute (from Trader Joe’s)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Combine everything in a food processor and run until everything is well mixed. Store in the refrigerator.   

Beautiful roasted peppers that DIDN’T cost me $7/jar

I use frozen garlic cubes that I bought at Trader Joe’s. So much easier than chopping garlic.

One final tip a friend shared with me today – you can freeze your roasted peppers to use later!!

I didn’t know Trader Joe’s had frozen garlic. We used it all the time when living in England, but I never found it in a grocery store here after moving back. Definitely picking it up the next time I’m at TJ’s.

They also have frozen cubes of cilantro and basil. I don’t think I have bought fresh garlic since I found the cubes.
