Temptation Island

I’m on temptation island. Tomorrow night I am going to book club with the ladies from work and I volunteered to bring dessert. Now why would someone on a diet volunteer to bring dessert? If I were wise, I would have volunteered to bring the salad or veggies+dip. All I could think was hey I haven’t baked in weeks! Face palm.

Now these book clubbers are no ordinary ladies. You can’t show up with a box of cookies from the store. I’ve been on a s’mores kick lately…there have been a lot of s’more protein bars and I even tried the McDonald’s s’mores pie. Logically this turned into s’mores brownies tonight.

Oh and they are ridiculously easy to make. Winning.

S’Mores Brownies:

  • One brownie mix for a 9×13 pan
  • 1/4 cup water
  • 2/3 cup oil
  • 2 eggs
  • 2-3 cups mini marshmallows
  • 3 full graham crackers, broken into small pieces

Preheat oven to 350 degrees and grease a 9×13 brownie pan. Prepare the brownie mix according to the directions. Mine required the water, oil, and eggs listed above. (I used the Betty Crocker family size brownie mix)

While the brownies are baking do 100 burpees and the Mean Abs June workout. Lay on the floor panting and searching for the strength to answer the beeping oven timer. Rejoice because now you can eat a brownie guilt-free!

When the brownies are finished baking, remove from the oven and top with the marshmallows. Return the pan to the over for 2-3 minutes. Top with the graham cracker pieces. Using a piece of wax paper, use your hand to push the graham cracker into the marshmallows. Return to the oven for 1-2 minutes. Allow to cool.


This is 3 cups of marshmallows


They puff up nicely in the oven!


Oh and they are a bitch to cut. Marshmallow is not your friend in this case. However they are delicious.


A rice krispy treat variation

Oh and this happened tonight. I was going to bring two desserts to book club. The flavor was spot on but the texture was all wrong. Too dense, too dry, and not chewy enough. I’m debating whether or not to give it another go. Stirring was a total upper body workout. I need to find a way to make the mix creamier and thinner before adding the rice krispies…

Or maybe I say eff it and just rejoice that the s’more brownies turned out. You can’t win them all!

Oh the s’mores brownies look amazing! I love the idea of that, so dangerous, haha!

Um, these look awesome. I was on temptation island all weekend with rice krispie treats. I actually found out that the crazy food porn ones that Averie Cooks makes aren’t that bad. The stuffed cookie dough ones are 156 cals for one bar!
