Pulled Pork Cupcakes

So now that I’m an adult, I have been trying very hard to be frugal. Other than my spending far too much money on clothes (which I refuse to buy for the entire month of July!), I’m terrible about wasting food. I hate hate hate throwing food away. Leftovers aren’t always the greatest so I’ve been trying to get creative.

Leftover BBQ pulled pork…what to do…

Pulled pork cupcakes.

I had four cups of leftover shredded pork. I used about a cup for these “cupcakes.”



  • About one cup leftover pulled pork
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1 tablespoon baking powder
  • 1 cup shredded cheese
  • 1 cup milk (buttermilk might be even better!)
  • 1 egg, beaten
  • 1/2 stick of unsalted butter, melted and cooled

In a bowl mix together the flour, salt, onion powder, baking powder, and shredded cheese. Set aside. In a separate bowl mix together the milk, beaten egg, and butter. Stir the liquid into the dry ingredients. In a lined muffin pan, put one spoonful of batter into each cup. I used a regular spoon like you would use for cereal. Spread the batter out to cover the bottom of the cup.


Now here’s the tricky part. I added the pork on top. I just “eye balled” it. I didn’t put as much as I would have like because I was worried I wouldn’t have enough batter to cover the tops. I’m glad I stopped with as much pork as I did.


After topping the cupcakes off with the second round of batter, bake at 375 degrees for 20-25 minutes.


Take to work, and become the most popular girl in the building.
